Food Defense Plan Development

Development of a Food Defense Plan is recommended by both the USDA and FDA.  It may be required by regulations to be written for the Food Safety Modernization Act.  (This is not a certain outcome of the Act and Periscope Consulting will continue to monitor pending regulation).
 
Periscope can provide three different approaches to creating a Food Defense Plan.  These meet the needs of the smallest one-facility plant to the largest multi-national.  The techniques that Periscope uses have been adopted for USDA and FDA workshops overseas and have been shared with hundreds of workshop participants.

All plans include a courtesy copy of free FDA resources:  FDA Guidance Document, FDA “ALERT” Training material, FDA “FIRST” Training material.
Options:
  1. Prior to the development of Food Defense Plans, a preliminary plant walkthrough, gap analysis or vulnerability assessment can be performed on one or more representative facilities (see next page for information on these offerings.)
  2. An action plan to close gaps identified during Food Defense Plan development.
  3. A daily checklist and weekly review based on the final Food Defense Plan.
  4. A training requirements document based on the final Food Defense Plan.
  5. A detailed proceduredocument based on the final Food Defense Plan.  This can usually incorporate alternatives, where appropriate, to apply to multiple locations.
  6. Formal Audit questions and scoring criteria can be developed based on the final Food Defense Plan.
